Researchers have recently identified several new compounds in roasted coffee that inhibit the enzyme α-glucosidase, critical in managing type 2 diabetes. These molecules have proven to be more powerful than a common anti-diabetic medication, paving the way for the development of functional foods based on coffee.

Innovative Methods for Quick Discoveries

The study conducted by a team of researchers from the Kunming Institute of Botany, Chinese Academy of Sciences, utilized advanced methods such as nuclear magnetic resonance (NMR) and liquid chromatography-mass spectrometry (LC-MS/MS) to identify bioactive compounds in Coffea arabica beans. These methods allow for rapid and efficient analysis of the relationship between compounds and α-glucosidase inhibitory activity.

Health Benefits

The new compounds, known as caffaldehydes A, B, and C, exhibited IC50 values of 45.07, 24.40, and 17.50 µM, indicating superior activity compared to the medication acarbose. This discovery suggests the potential for creating functional foods that assist in blood sugar control and diabetes management.
